Bisquick Banana Bread with Vanilla Glaze

Today's recipe is...

Bisquick Banana Bread with Vanilla Glaze

3 medium bananas, with speckled skins
1 egg
1/2 cup buttermilk
1 teaspoon nutmeg
1 tbsp. bottled grated orange peel
1/2 cup Bisquick
1 yellow cake mix

Slice bananas very thinly into 2 quart mixing bowl. Use a wire whisk to break up slices of bananas into bits without really mashing them. Stir in remaining ingredients as listed, switching to mixing spoon when you add Bisquick and the cake mix (dry from the box, by the way). Make sure every particle is dissolved, but don't over beat or bread will be heavy. Turn batter into a Pam sprayed 8 1/2 inch Pyrex loaf pan. Bake at 325 degrees for 65 minutes or until done. Cool in pan on wire rack 15 minutes. Drizzle top of loaf with a thin Vanilla Glaze.

Vanilla Glaze
Beat together until smooth: 1 teaspoon vanilla 10 tablespoons powdered sugar Spread over warm bread. Cool 1 hour longer before wrapping in plastic and chill bread 4 hours, before slicing.

Marmalade Muffins

Today's recipe is...

Marmalade Muffins

Wet Mix
peel of 1 grapefruit and 1 orange
1-1/2 cups buttermilk
1 cup sugar
1 tsp salt
1/2 cup butter or margarine

Dry Mix
1-3/4 cups flour
2 tsp baking powder
1/2 tsp baking soda

Preheata oven to 375 degrees F, prepare pans. Cut complete fruit skins into blender, add buttermilk and grind fine. Add sugar, salt and butter and blend. Stir dry mix ingredients together and pour wet mix over, stirring just to moisten. Bake for 20 mins or until done. Makes 12 muffins. Note: These are a really piquant muffin, ideal for breakfast. For a slightly sweeter taste, while warm dip in melted butter and white sugar.

Makes 3 dozen cookies.

Pa Dutch Apple Muffin Cake

Today's recipe is...

Pa Dutch Apple Muffin Cake

2 c. all-purpose flour
1 tbsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1 1/4 tsp. cinnamon
1/2 tsp. allspice
1/4 tsp. ground cloves
1 1/4 c. sugar
1/4 c. butter
1 c. sour cream
2 eggs
1 c. finely diced, peeled apple (I use Granny Smith apples)
Butter and fine dry bread crumbs

Heat oven to 350 degrees. Butter an 8 cup charlotte pan or souffle dish and sprinkle with bread crumbs, tapping out excess. Combine dry ingredients and blend well. Melt butter. Off heat, stir in sour cream and beat in eggs. Beat the butter mixture into the dry ingredients and blend until batter is smooth and satiny. Stir in apple. Scrape batter into prepared pan, smoothing batter until it is level. Sprinkle with crumb topping. Bake 1 hour until crumbs are crisp and lightly browned and a skewer inserted in center of cake comes out clean. If tube pan is used, start testing for doneness after 45 minutes. Cool cake in pan 20 minutes. Turn and knife between cake and sides of pan and gently invert cake onto counter. Re-invert on a rack and cool thoroughly before serving.

CRUMB TOPPING:
In a small bowl blend: 3 tbsp. all-purpose flour 1/4 tsp. cinnamon Cut in 2 tablespoons cold butter until mixture forms coarse crumbs.

Shoepeg Corn Salad

Shoepeg Corn Salad

2 cans shoe peg corn, drained
1 green pepper, chopped fine
1 bunch green onions, chopped fine
1 jar pimento, drained and chopped
1/2 c. ripe olives, sliced
1 c. grated Cheddar cheese

Toss together with 8 oz. low calorie or regular Italian dressing. Serves 12 to 14.

Meatballs In Green Pepper Gravy

Today's recipe is...

Meatballs In Green Pepper Gravy

1-1/2 lb. ground beef
1 tsp. salt
3/4 tsp. celery salt
1 tsp. oregano
1/2 tsp. pepper
1/2 tsp. garlic powder
3 tbsp. butter
3 tbsp. flour
1 lg. green pepper, diced
3 beef bouillon cubes, dissolved in 1
1/2 cups boiling water

Blend well into the ground beef - the spices. Shape into balls about the size of a quarter. Roll balls into flour. Heat butter in heavy skillet and brown meatballs lightly. Add green pepper and cook 3 more minutes. Add dissolved bouillon cubes to meatballs and enough flour to thicken for gravy.

Blueberry Square Cake

Today's recipe is...

Blueberry Square Cake

2-1/2 sticks margarine
1-1/2 c. sugar
4 eggs, separated
2 c. flour
1 tsp. vanilla
1 can blueberry pie filling

Beat egg whites until stiff and set aside. Cream margarine and add sugar, egg yolks, flour and vanilla to margarine. Beat well. Fold in egg whites by hand (batter will be thick). Spoon into 11 x 8 inch Pyrex pan. Drop pie filling by tablespoons on top of batter. Bake 40 minutes at 350 degrees.

Oyster and Potato Stew

Oyster and Potato Stew

2 medium potatoes, peeled & diced
1 small onion, chopped
2 cup water
1/2 teaspoon salt
2 cup milk or whipping cream
8 ounce can small bay oysters
1 teaspoon dried tarragon leaves

Simmer potatoes, onion, salt in water for 20 to 25 minutes or until potatoes are done. Mash potatoes in pan add milk, oysters, and tarragon leaves. Heat 2 to 3 minutes more. Add salt to taste.

Parsley and Chive Lamb Chops

Parsley and Chive Lamb Chops

4 shoulder lamb chops, 1/4 inch thick
salt and pepper to taste
1/4 cup melted butter
1/4 cup chopped parsley
1/4 cup chopped chives

Arrange chop in shallow baking dish. Sprinkle with salt and pepper. Combine remaining ingredients; mix well. Pour over lamb. Bae at 350 degrees for 30 minutes.

Bran Muffins

Today's recipe is...

Bran Muffins

1 egg beaten
1-1/2 c. milk
3 T. oil
3 t. baking powder
3 t. soda
2 t. molasses
1 c. raisins
1 1/2 c. bran
1 c. whole wheat flour
1 t. salt
1/2 c. brown sugar
1/4 c. honey

Mix egg, milk, oil and molasses. Add bran and let set 5 minutes. Sift rest of ingredients into first mixture and add raisins. Fill paper lined muffin cups 1/2 full. Bake at 375 degrees for 20 minutes.

Makes 12 muffins.

Blueberry Coffee Cake

Today's recipe is...

Blueberry Coffee Cake

1/4 c. graham cracker crumbs
2 c. all purpose flour
1 c. sugar
3 tsp. baking powder
1 tsp. salt
1/3 c. butter or margarine, softened
1 c. milk
1 egg
2 c. fresh or frozen (defrosted & drained) blueberries
Lemon Glaze (below)

LEMON GLAZE
1 c. powdered sugar
1/4 tsp. grated lemon peel
1 tbsp. lemon juice

1. Generously grease a 12-cup bundt cake dish (microwave safe); coat with graham cracker crumbs.

2. Beat remaining ingredients in large bowl on low speed 30 seconds. Beat on medium speed, scraping bowl occasionally, 2 minutes. Spread 1/2 of batter in prepared pan. Sprinkle 1/2 of blueberries over batter. Spread with remaining batter and sprinkle remaining blueberries on top. Microwave uncovered on high, rotating dish 1/4 turn every 4 minutes until top springs back when lightly touched, 12 to 14 minutes. Let cool on heat proof surface 10 minutes (do not use rack).

3. Invert coffee cake onto serving plate. Drizzle with lemon glaze if desired. Mix powdered sugar, lemon peel and lemon juice until smooth. Add a few drops additional lemon juice if necessary, until glaze is of desired consistency.

Combine ingredients in a saucepan and bring to a boil. Reduce heat and simmer, covered for about 45 minutes, or until sauce is very thick. Stir occasionally. Yield: 2 cups.

Ground Turkey Meatloaf

Today's recipe is...

Ground Turkey Meatloaf

1 pound ground turkey meat
1/2 cup cracker crumbs
1 cup brown rice, cooked
1/2 cup chopped onion
1/4 cup finely chopped celery
1/4 cup grated carrot
1 1/2 teaspoon prepared dijon mustard
2 tablespoon honey
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon ground thyme
1/8 teaspoon white pepper
1/4 cup no salt added tomato sauce
2 egg whites
6 tablespoon no salt added ketchup

Preheat oven to 350 degrees. Mix all ingredients except honey and ketchup. Pour mixture into 7 or 8 inch loaf pan and bake for 40 minutes, until firm and brown on top. Combine honey and ketchup and spread evenly over top of loaf and bake 10 minutes longer. Serve with additional no salt added ketchup if desired.
Makes 4-6 servings

Cherry Wink Cookies

Today's recipe is...

Cherry Wink Cookies

2 1/4 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup shortening
1 cup sugar
2 eggs
2 tablespoons milk
1 teaspoon vanilla
1 cup chopped pecans
2 1/2 cup Maraschino cherries, halved

Sift together all dry ingredients except sugar. Blend shortening and sugar. Add eggs, milk and vanilla; mix well. Add sifted dry ingredients; mix thoroughly. Mix nuts into batter. Drop by teaspoons onto crushed corn flakes. Toss to coat and form mixture into balls. Top each ball with a cherry half. Bake on greased cookie sheet at 375 degrees for 12-15 minutes.

Meatball Sandwiches

Today's recipe is...

Meatball Sandwiches

4 lb. lean ground beef
2 eggs
1 pkg. dry Hidden Valley Ranch dressing
1 pkg. finely crushed Saltine crackers

Mix all ingredients together in a large bowl, adding more cracker crumbs if mixture is too wet and more eggs if mixture is too dry. Form mixture into meatballs slightly smaller than the size of a golf ball. Bake at 350 degrees until cooked through, or approximately 20 minutes. Pour off any grease. Place meatballs in a crockpot or Dutch oven and cover with canned spaghetti sauce. Heat until sauce is hot. Serve meatballs on steak rolls and garnish with shredded mozzarella cheese.

Creamy Cucumber Salad

Today's recipe is...

Creamy Cucumber Salad

1 can Eagle Brand milk
1 c. (8 oz.) sour cream
1/3 c. white vinegar
2 tsp. salt
3 med. cucumbers, sliced
1/2 tsp. dillweed
2-3 cloves garlic, chopped
2 med. onions, sliced & separated
into rings

In large bowl combine milk, sour cream, vinegar, salt, dill and garlic; mix well. Fold in other ingredients. Chill 1 hour to blend flavors. (Cucumbers release moisture as salad is chilled.) Refrigerate leftover salad. Serves 12-14 people..

Cottage Cheese Pancakes

Today's recipe is...

Cottage Cheese Pancakes

1 cup cottage cheese
1/4 cup sour cream or yogurt
2 eggs
1 tablespoon melted butter or margarine
1/2 cup four
1/4 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
Combination of 1/2 oil and 1/2 butter for frying

Combine all ingredients and mix well and until smooth in a blender. Melt about 2 tablespoons butter and 2 tablespoons oil in large skillet. When bubbling, drop cheese mixture from large spoon into skillet. Brown on medium heat on both sides unitl golden brown. Repeat with remaining cheese mixture, adding more butter and oil as necessary.

Tuna and Mixed Vegetable Casserole

Tuna and Mixed Vegetable Casserole

1 (7 ounce) can tuna, drained
1 can mushroom soup
1 package frozen mixed vegetables
3 ounces milk
1/4 cup green olives, chopped
1 teaspoon onion, chopped
1 small can chow mein noodles
1 ounces American cheese, grated

Combine tuna, mushroom soup, mixed vegetables, milk, green olives, onions and 3/4 of the noodles. Pour into small greased casserole. Top with remaining noodles and cheese. Bake in preheated 375 degree oven for 30 minutes.
Makes 4 servings.

Easy Goulash

Easy Goulash

1 lb. hamburger
1 can stewed tomatoes
1 can tomato sauce
Onions (optional)
Salt and pepper to taste
Season salt
1 sm. pkg. shell macaroni
Mushrooms (optional)

Brown hamburger with onions. Drain. Add tomatoes and tomato sauce. Simmer. Boil water and cook shell macaroni until tender. Drain and add to hamburger mixture. Serve warm.

Cheesecake Topped Brownies

Cheesecake Topped Brownies

1 (21.5 or 23.6 oz.) pkg. fudge brownie mix
1 (8 oz.) cream cheese, softened
2 tbsp. margarine or butter, softened
1 tbsp. cornstarch
1 (14 oz.) can Eagle Brand sweetened condensed milk (NOT evaporated)
1 egg
1 tsp. vanilla extract
Ready-to-spread chocolate frosting

Preheat oven to 350 degrees. Prepare brownie mix as package directs. Spread into well-greased 9x13 inch pan. In small bowl, beat cheese, margarine, cornstarch until fluffy. Gradually beat in condensed milk, egg and vanilla until smooth. Pour evenly over brownie batter. Bake 45 minutes. Cool. Spread with frosting. Cut into bars.

Salmon Noodles Romanoff

Salmon Noodles Romanoff

8 oz. uncooked medium noodles
1-1/2 cups creamed cottage cheese
1-1/2 cups dairy sour cream
1/2 cup onion, finely chopped
1 clove garlic, minced
1-2 tsp. Worcestershire sauce
Dash red pepper sauce or cayenne red pepper
1/2 tsp. salt
1 (16 oz.) can salmon, drained, or 2 (6 1/2 oz.) cans tuna, drained
1/2 cup shredded sharp cheddar cheese (about 2 ounces)

Preheat oven to 325 degrees F.

Cook noodles as directed on package; drain.

Combine noodles and remaining ingredients EXCEPT for cheddar cheese. Place about 1 cup salmon mixture in each of 5 or 6 greased individual casseroles or baking shells.

Top with cheddar cheese and bake uncovered 20-25 minutes.

Crock Pot Chili

1 lb. hamburger, browned & drained
1 lb. sausage, browned & drained
1 lg. onion
1 c. green pepper, sliced
1 c. sliced celery
2 (15 oz.) cans pinto beans
1 lb. 12 oz. can tomatoes, cut up
6 oz. tomato paste
2 cloves garlic
2 tsp. chili powder
2 tsp. salt

Crock pot 8-10 hours on low.

Amish Chicken Casserole

8 oz. noodles, cooked
2 c. leftover cooked chicken, cubed
2 c. chicken broth (can used canned)
1 c. milk
1 can mushrooms, drained
2 tsp. salt
1/2 tsp. pepper
1/2 c. margarine
1/3 c. flour
1/3 c. grated Parmesan cheese

Melt margarine, then add flour and stir until smooth. Gradually add milk and broth, then seasonings and mushrooms. Combine chicken, cooked noodles, and prepared sauce. Put in ungreased 9 inch x 13 inch x 2 inch baking pan and top with Parmesan cheese.
