Daily Recipes: Lemon Drop Cookies

I'm trying something new for Annie's Recipes :) I will post a new recipe each day and will post a more formal newsletter twice a month, or whenever a holiday or special occasion warrants it. Hope you enjoy the daily recipes!

I love lemons, so refreshing, such a nice change from chocolate! Try these lovely cookies for your next baking adventure, and be sure to

Lemon Drop Cookies

2 cups sifted flour
2 teaspoons baking powder
pinch of salt
3/4 teaspoon grated lemon rind
1/2 cup shortening
1 cup sugar
1 egg
1/4 cup lemon juice
1/4 cup water

Sift flour, baking powder and salt. Blend rind and shortening; add sugar gradually, cream well. Add egg, lemon juice and water; beat well. Add dry ingredients and mix thoroughly. Drop by level tablespoons onto greased cookie sheet. Bake at 400 degrees for 8 minutes. Do not stack or store until cold.

Makes 5 dozen cookies

Editor's Note: I learned a great trick from a fabulous baker for making citrus recipes more fragrant. Instead of blending the rind with the shortening, combine the rind with the sugar and use your fingers to rub the rind into that sugar. Then cream the shortening and sugar mixture together. Try it!
