Who doesn't love their crockpot? I use mine pretty regularly, especially on baseball and soccer practice nights when it's just too hard to make dinner.
Crockpot Jambalaya
1-1/2 pound boneless Chicken breasts
1 pound smoked sausage, sliced
1 pound cooked Shrimp
28 ounces tomatoes
1 chopped onion
1 green pepper, chopped
1 cup chicken broth
2 teaspoons oregano
2 teaspoons dried parsley
2 teaspoons Cajun seasoning
1 teaspoon cayenne pepper
1 cup celery, diced
2 cups cooked rice
Cut chicken into cubes. Slice sausage. Chop onion, green pepper, and celery. Put all into crock pot. Add remaining ingredients except shrimp and rice. Cook on low heat for approximately 7 hours. About 30 minutes before serving, add cooked shrimp and cooked rice.

It's been a crazy month...
Good idea! I often do crockpot recipes on baseball practice nights. Home late and no time to cook! This sounds great.
