This is a nice, easy cucumber salad recipe. Simple to prepare and very tasty. I used rice vinegar in place of red wine vinegar, but you could use several different types according to your tastes. Balsamic would work nicely with this as well. I prefer the mild taste of rice vinegar. I give this a 4 out of 5.
