Fresh Fun Desserts

In our neck of the woods, Spring arriving means potlucks, picnics, fiestas and more! I always struggle with what to bring to family dinners, team potlucks or friendly picnics. Do I bring a traditional side dish and if I do will eight other people be bringing the same potato salad recipe?

So, I usually opt to bring a dessert. I find desserts easier to make, less time consuming and less stressful. There's a better chance of more diversity at the dessert table - in my humble opinion. I put together a few dessert ideas that are delicious and simple!

Get Fruity in the Kitchen for Summer!

With Summer literally right around the corner and all sorts of fun fruits starting to reappear at the produce section and local farmers markets, it's time to get a little fruity! Fruit and Summer go together with...peas and carrots! (Yes, I said it.)

The Amish Are Coming!

And they are bringing their desserts!  Who knew the Amish had so many lovely desserts?  I thought they preferred a simple lifestyle.  I guess you find pleasure in the little things...like Amish Apple Cake!

If you are not familiar with funnel cake, please go to your nearest county fair and find some...right now!  Okay maybe not right now, but this summer you really should try some.  Or make your own with our Amish Funnel Cake recipe!

Amish Shoo Fly Pies
I am not entirely sure what Shoo Fly Pie is, but it looks delicious so I will leave it at that.  If you get really brave and inspired and try our recipe, let me know how it turns out!

Amish Sour Cream Apple Pie
Now this is something I can sink my sweet tooth into...Amish Sour Cream Apple Pie.  Too rich?  I don't think so.  Just take a bite and let all that apple sweet goodness melt in your mouth!

Apple Pie

Today's recipe is...

Apple Pie

1 can apple pie filling

Mix together:
1/2 cup flour
1/2 teaspoon baking powder
1 tablespoon softened butter
1/2 cup sugar
1 egg
1 teaspoon vanilla
Cinnamon

Pour apples into a pie plate (oven proof) cover with a light dusting of cinnamon. Spread crust mixture over top. Bake at 350 degrees until golden.

Amish Orange Pie

Today's recipe is...

Amish Orange Pie

1 cup sugar
4 tablespoons flour
1/4 teaspoon salt
1/2 cup orange juice
Grated rind of 1 orange
1 cup of water
Juice of 1/2 lemon
2 tablespoons butter
2 eggs, separated
Pastry for 1 (9 inch) crust

Combine sugar, salt and flour. Add water and fruit juice. Cook mixture until thickened. Add beaten egg yolks and cook 2 minutes longer. Remove from heat and add butter and grated rind. Pour mixture in baked pie shell.
Beat egg whites for meringue, add 3 tablespoons of sugar and 1 teaspoon orange or lemon juice. Bake at 350 for 12 minutes, or until meringue is a golden brown. Makes 1 (9 inch) pie.

Butter Tarts

Today's recipe is...

Butter Tarts

1 cup brown sugar
1 egg
3 tablespoons butter
2 tablespoons corn syrup
1 teaspoon vanilla
Pastry for 1 (9 inch ) crust

Mix sugar and butter together
Add egg, syrup, and vanilla and combine well
Line 6 tart pans with pastry; place 2 large spoonfuls of mixture in each
Bake at 400 degrees for about 20 minutes, or until pastry is delicately browned

Magic Lemon Meringue Pie

Today's recipe is...

Magic Lemon Meringue Pie

1 (8-inch) baked pastry shell, cooled
2 eggs, separated
1 (14 oz.) can Eagle Brand sweetened condensed milk
1/2 c. Realemon reconstituted lemon juice
1 tsp. grated lemon rind
1/4 tsp. cream of tartar
1/4 c. sugar

Preheat oven to 350 degrees. In medium bowl, beat egg yolks; stir in sweetened condensed milk, Realemon and rind. Turn into pie shell. In small bowl, beat egg whites with cream of tartar until foamy; gradually add sugar, beating until stiff but not dry. Spread meringue on top of pie sealing carefully to edge of shell. Bake 15 minutes or until meringue is golden brown. Cool. Chill before serving. Refrigerate leftovers.

Amish Maple Cream Pie

Today's recipe is...

Amish Maple Cream Pie

1 can condensed milk
2/3 c. maple syrup
Pinch salt

TOPPING
2 c. whipping cream
1/2 c. powdered sugar
2 tsp. vanilla
Pinch salt

Cook on low heat, very slow, stirring constantly until it bubbles in the middle. Pour into a baked pie shell. Chill for 1 hour. Whip ingredients until thick. Pour on top of pie filling and sprinkle with chopped pecans.

Mennonite Apple Crumb Pie

Today's recipe is...

Mennonite Apple Crumb Pie

6 or more apples, peeled, cored & quartered
3/4 c. sugar
1 tsp. cinnamon
3/4 c. flour
1/3 c. butter or margarine
Pie shell

Put apples in pie shell; use more than 6 if desired. Mix 1/4 cup of sugar and cinnamon; sprinkle on top. Put a pot lid on top of pie. Bake at 425 degrees for 10 minutes. Combine 1/2 cup of sugar, flour and butter and use low speed of mixer to make crumbs. Take pot lid off pie; sprinkle with crumbs. Bake at 350 degrees for 35 minutes.

Amish Fry Pies

Today's recipe is...

Amish Fry Pies

PIES
9 c. cake flour
2 tbsp. sugar
1 tbsp. salt
3 c. shortening
2 c. water
Thick fruit filling

Shortening for deep fat frying


GLAZE
8 lbs. powdered sugar
1/2 c. cornstarch
1/3 c. powdered milk
1 tsp. vanilla extract
2 1/2 c. warm water

To make pies, combine in large mixing bowl the flour, sugar and salt. Cut in shortening until pieces are the size of small peas. Add water a little at a time until the four mixture is moistened. Form into 4 balls. Divide each ball into 10 pieces and roll each piece into a circle. Top one side of circle with filling and fold circle in half. Cramped edges to seal. Heat shortening; fry a few pieces at a time in deep fat until golden brown. Cool on wire rack. Meanwhile, in large mixing bowl, combine all glaze ingredients until smooth. While pies are still warm, dip them into glaze. Allow pies to drip on wire racks until cool. Yields about 40 pies.

Fourth of July Recipe Ideas

You may have noticed that I didn't post any daily recipes this week. I've been working on a big project in an effort to improve the way that you use Annie's Recipes


As you know, this weekend in the US we celebrate American Independence Day, otherwise known as the Fourth of July. This holiday is usually celebrated with family and friends, outside in the warm weather and around the barbecue grill!

Here are some recipes you may enjoy this holiday weekend! Each recipe has a link to its printable version. Be sure to snap a photo of anything that you make from our site, submit it and you'll be entered in our monthly drawing!


Lemonade Cake

1 box Duncan Hines yellow cake mix
1 sm. box lemon Jello
3/4 c. boiling water
4 eggs
3/4 c. Crisco oil
1 sm. can frozen lemonade
1/2 c. sugar

Mix Jello and boiling water until dissolved. Let cool. In large bowl mix cake mix, eggs, oil and Jello mixture. Mix with a spoon, not a mixer. Spray bundt pan with Baker's Joy. Spoon in cake mixture. Bake at 325 degrees for 1 hour, without opening oven door. In a small bowl mix frozen lemonade and sugar together. Then pour or spoon over cake as soon as it comes out of the oven. Then allow to cool before cutting.


Lemonade Pie

1 sm. can frozen lemonade (pink or
plain) do not thaw
1 can Eagle Brand milk
9 oz. Cool Whip
1 crumb crust
Strawberries, optional
Coconut, optional

Mix or fold all ingredients. Pour into prepared pie crust. Chill at least 2 hours. Garnish with strawberries or coconut, if desired. Can add few drops of yellow food coloring, or pink coloring, if desired.


Peach Slush

2 peaches, peeled and pitted
1 (6 oz.) frozen lemonade
1 lemonade can of vodka or Club Soda for non-alcoholic

Put all in blender. Gradually add 8-14 ice cubes. Freeze. Serves 2-4. Can use 1/2 pint strawberries or nectarines.


Strawberry Gingerale Party Punch

1 pkg. (4 serving size) Jello, strawberry flavor
1/4 c. sugar
1 1/2 c. boiling water
2 1/2 c. cold water
1 pkg. (10 oz.) frozen strawberries
1 can (6 oz.) frozen concentrated lemonade or limeade
1 bottle (1 liter) gingerale, chilled
ice cubes (optional)

Dissolve gelatin and sugar in boiling water. Add cold water, strawberries and concentrate; stir until strawberries and concentrate are thawed. Chill until ready to serve. Stir in ginger ale. Serve with ice if desired. Makes 10 cups or 20 servings.


Summer Veggie Salad

1 can Campbell's tomato soup
1/2 c. dill pickle juice
1/4 c. vinegar
1/2 c. oil
3/4 c. sugar
1 tbsp. Worcestershire sauce
1/2 tsp. salt
1 tsp. Grey Poupon mustard
1/2 tsp. black pepper

VEGGIES
1 head cauliflower, cut into flowerets
1 bunch broccoli, peel stems, cut into bite sized pieces
1 lg. green pepper, cut into bite sized pieces "
1 onion, cut in thin slices & ringed
1 c. celery slices
2 c. sliced carrots, cook to tender crisp (about 5 minutes)
1 (4.5 oz.) jar sliced mushrooms 1 pt. cherry tomatoes, cut in half

Mix dressing together. Pour over cauliflower, broccoli, green pepper, onion, celery and carrots. Marinate at least 4 hours, preferably overnight, stirring often. Before serving, add tomatoes and mushrooms.


Strawberry Poke Cake

1 pkg. white cake mix (2 layer)
1 pkg. (3 oz.) strawberry Jello
1 c. boiling water
1/2 c. cold water
Cool Whip (thawed)

Prepare cake according to package directions. Bake in single layer large cake pan for 30 minutes or until done. Cool in pan 15 minutes. Poke with a fork at 1/2 inch intervals. Dissolve Jello in boiling water, add cold water and spoon over cake.

Chill 3 to 4 hours then top with Cool Whip.

Amish Lemon Sponge Dessert

Today's recipe is...

Amish Lemon Sponge Dessert

2-1/2 c. sifted cake flour
1 tsp. salt
2/3 c. shortening
1/3 c. cold water (approximately)

FILLING FOR ONE 9" UNCOOKED PIE SHELL:
2 tbsp. butter
1 c. sugar
3 eggs, separated
3 tbsp. flour
1/2 tsp. salt
Lemon juice & rind of 1 lemon
1-1/2 c. hot milk

Measure sifted flour, add salt and sift again. Cut in shortening using a pastry blender or two knifes. Sprinkle with water mixing lightly with fork. press into ball. Makes enough pastry for a 9 inch two crust pie or two shells. Cream butter; add sugar and egg yolks. Beat until light and fluffy. Stir in flour, salt, lemon juice, rind and hot milk. Fold in stiffly beaten egg whites. Bake in 400 degree oven for approximately 40 minutes.

Peach Custard Pie

Today's recipe is...

Peach Custard Pie

1 c. sugar
2 eggs, well beaten (egg substitute may be used)
2 tbsp. flour
1 tbsp. butter
1/2 tsp. Cinnamon
Sliced fresh peaches (elderberries)
1 (9") unbaked pie crust

Add flour and sugar to well beaten eggs. Slice enough pared fresh peaches to fill the unbaked shell. Cover with the egg mixture. Sprinkle with cinnamon and dot with butter. Bake 15 minutes at 450 degrees and about 30-40 minutes at 350 degrees until custard is set and slightly brown.

Upside Down Apple Pie

Today's recipe is...

Upside Down Apple Pie

1/4 cup butter or margarine
2/3 cup pecan halves
2/3 cup firmly packed brown sugar
Pastry for double crust 9" pie
6 cups peeled & sliced cooking apples (about 1 3/4 pound)
Juice of 1 lemon
1/3 cups firmly packed brown sugar
1 tablespoon all-purpose flour
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

Spread butter in bottom of a 9 inch, deep-dish pie plate. Arrange pecan halves, rounded sides down, on bottom and gently press into butter. Sprinkle 2/3 cup brown sugar over pecans and press gently. Roll half of pastry to 1/8 inch thickness on a lightly floured surface; transfer to pie plate and press firmly onto bottom and sides. Trim off excess pastry along edges; set aside. Combine apples and lemon juice in bowl. Combine remaining brown sugar and ingredients. Sprinkle over apple mixture; toss gently. Spoon filling into pastry shell. Roll remaining pastry to 1/8 inch thickness; transfer to top of pie. Fold edges under and flute. Prick top of crust with fork for steam to escape. Bake at 450 degrees for 10 minutes. Reduce temperature to 350 degrees and bake 30-40 minutes. Cool 5 minutes. Place plate on top of pie and invert.

Amish Vanilla Pie

Today's recipe is...

Amish Vanilla Pie

1/2 c. firmly packed brown sugar
1 tbsp. flour
1/4 c. dark corn syrup
1 1/2 tsp. vanilla
1 egg, beaten
1 c. water
1 c. flour
1/2 c. firmly packed brown sugar
1/2 tsp. cream of tartar
1/2 tsp. baking soda
1/8 tsp. salt
1/4 c. butter
1 unbaked 9" pie shell

Combine first 5 ingredients in 2 quart saucepan. Slowly stir in water. Cook over medium heat until mixture comes to a boil, stirring constantly. Let cool. Combine rest of ingredients (except pie shell) and mix until crumbly. Pour cooled mixture into pie shell and top with crumbs. Bake at 350 degrees for 40 minutes or until golden brown.

Amish Raisin Pie

Today's recipe for Amish Raisin Pie is a favorite in many kitchens. Give this one a try today!

Amish Raisin Pie

1 3/4 cups milk
3 large eggs, separated
1 4-oz pkg. Cook & Serve vanilla flavored Jell-O pudding & pie filling
1 tsp. pure vanilla extract
1/2 tsp. ground allspice
1 1/2 cup golden seedless raisins
1 9" baked pie shell
6 tbsp. granulated sugar

In a small saucepan, combine milk and egg yolks; whisk gently to blend well. Stir in vanilla pudding mix. Cook over medium high heat, stirring constantly until mixture comes to a boil. Remove from heat; stir in vanilla extract and allspice. Blend well. Fold in the raisins and allow mixture to cool. Turn mixture into pastry shell; chill thoroughly.

Meanwhile in a small mixing bowl, beat egg whites until soft peaks form. Gradually add sugar, beating until stiff but not dry. Spoon meringue over pie, making sure that meringue touches edge of crust. Bake at 450 degrees for 4-5 minutes or until meringue is lightly browned.
