In less than a month, millions of people will sit down in front of their television sets to watch the Super Bowl. The Super Bowl is synonymous with appetizers, finger foods, snacks and desserts. Appetizer Tips

Planning appetizers doesn't have to be hard. A little forethought can go a long way and help make party day a breeze. Keep these tips in mind when put your appetizer plans into action.

Dips and Spreads
Dips that contain sour cream and cream cheese can be made 2-3 days ahead of time. This is beneficial, as it allows the flavors to mingle while in the refrigerator. Stir once or twice a day to distribute the flavors and keep in a covered container.

Chop Chop
Vegetables such as celery, carrots, radishes, and zucchini can be chopped or sliced several days ahead of time and kept in sealed plastic bags or covered containers. If fresh herbs are called for, these can also be chopped, snipped or minced and kept in sealed plastic bags. Hard cheeses, such as cheddar, and semi-soft cheeses, like Gouda or Havarti, can be sliced the day before and stored in plastic bags or covered containers.

Tuna and Curry Dip

Today's recipe is...

Tuna and Curry Dip

1 (7 ounce) can tuna in water, drained
1 (8 ounce) can water chestnuts, chopped
1 tablespoon minced onion
1 teaspoon lemon juice
1 teaspoon soy sauce
1/2 teaspoon curry powder
1/2 cup mayonnaise

Combine all ingredients and mix well. It is best if chilled.
Makes 2 cups.

Sausage and Spinach Balls

Today's recipe is...

Sausage and Spinach Balls

1 pound sausage
10 ounce pkg. frozen chopped spinach
1 package stuffing bread crumbs
1/2 cup Parmesan cheese
1 cup mayonnaise

Thaw; drain spinach. Mix all ingredients together. Roll into one inch balls. Bake at 300 degrees for 20-25 minutes.

Butterscotch Toast

Today's recipe is...

Butterscotch Toast

1/4 cup softened butter or margarine
1/2 cup firmly packed light brown sugar
8 slices of bread, toasted
1/2 cup finely chopped walnuts or pecans

Combine sugar and butter and mix until well blended. Spread each slice of toast with the butter mixture and sprinkle with nuts. Place slices on ungreased cookie sheet, buttered side up. Place under the broiler, about 6" from the heat, until top is bubbly and nuts are toasted. Cut slices in half diagonally and serve.

Sausage Stuffed Mushrooms

Today's recipe is...

Sausage Stuffed Mushrooms

1 1/2 pound mushrooms
1/2 pound bulk sausage
1/2 cup shredded mozzarella cheese
1/4 cup bread crumbs

Preheat oven to 450 degrees. Remove stems from mushrooms; chop and save stems. Cook sausage. Remove from pan. Using 2 tablespoons of sausage drippings, cook mushroom stems for 10 minutes. Remove from heat and stir in sausage, bread crumbs and cheese. Fill mushrooms with mix. Bake 15 minutes at 450 degrees.

Easy Sweet Pickles

Make your own sweet pickles from a jar of regular pickles. use them to flavor hot dogs, egg salad and more.

Easy Sweet Pickles

2 qt. jar Kosher dill pickles (whole)
3 c. sugar
1 tbsp. vinegar
2 sm. onions, sliced
4 sticks cinnamon, broken

Drain all juice from pickles. Cut the ends of pickles and slice crosswise. Add remaining ingredients. Refrigerate for 24 hours, turning several times. Pickles will keep indefinitely in refrigerator. Pickles may be returned to jar or put in Tupperware.
