Creative Snacks for Summer

Play dates, swimming pool adventures, and camping trips abound during the summer at our house. Which leaves my boys constantly asking "What can I have for a snack?" What's a busy mommy to do when kiddos are hungry and you've got places to go and people to see?

Browse through this small list of cookies and snack treats and try baking up a bunch of batches in advance! Divide them up into handy ziplock bags and freeze them for grab-n-go later in the month. Or visit Annie's for all sorts of snack recipes to try!

Mother's Day Fixins - Easy As ABC's!

Chocolate Raspberry Muffins

Today's recipe is...

Chocolate Raspberry Muffins

15 oz can raspberries in syrup
2 cups self-raising flour
1/2 cup sugar
1/2 cup Chocolate Chips
1 lightly beaten egg
2 ozs melted butter
3/4 cup buttermilk

Preheat oven to 375 degrees F and prepare pans. Pour undrained raspberries into a pan, bring to boil, boil without stirring for about 12 minutes, or until mixture is thick and a jam-like consistency; cool. Combine the sifted flour, sugar and chocolate in a bowl. Mix egg, butter and buttermilk. Stir dry mix into wet mix until just combined. Gently fold in the raspberry mixture. Spoon into pans and bake for about 15 minutes or until cooked. Makes 12 muffins.

Marmalade Muffins

Today's recipe is...

Marmalade Muffins

Wet Mix
peel of 1 grapefruit and 1 orange
1-1/2 cups buttermilk
1 cup sugar
1 tsp salt
1/2 cup butter or margarine

Dry Mix
1-3/4 cups flour
2 tsp baking powder
1/2 tsp baking soda

Preheata oven to 375 degrees F, prepare pans. Cut complete fruit skins into blender, add buttermilk and grind fine. Add sugar, salt and butter and blend. Stir dry mix ingredients together and pour wet mix over, stirring just to moisten. Bake for 20 mins or until done. Makes 12 muffins. Note: These are a really piquant muffin, ideal for breakfast. For a slightly sweeter taste, while warm dip in melted butter and white sugar.

Makes 3 dozen cookies.

Bran Muffins

Today's recipe is...

Bran Muffins

1 egg beaten
1-1/2 c. milk
3 T. oil
3 t. baking powder
3 t. soda
2 t. molasses
1 c. raisins
1 1/2 c. bran
1 c. whole wheat flour
1 t. salt
1/2 c. brown sugar
1/4 c. honey

Mix egg, milk, oil and molasses. Add bran and let set 5 minutes. Sift rest of ingredients into first mixture and add raisins. Fill paper lined muffin cups 1/2 full. Bake at 375 degrees for 20 minutes.

Makes 12 muffins.

Black Bottom Muffins

Today's recipe is...

Black Bottom Muffins

1-1/4 cups flour
3/4 cup sugar
1/2 tsp baking soda
1/3 cup unsweetened cocoa
1/4 tsp salt
2/3 cup buttermilk
1/4 cup vegetable oil
1 lightly beaten egg
1 tsp vanilla
1/4 cup lightly salted butter or margarine, melted and cooled
1/3 cup semisweet chocolate chips, chopped

Topping
6 oz softened cream cheese
1/4 cup sugar
1 lightly beaten egg
1/8 tsp almond extract
1/4 cup toasted slivered almonds

Preheat oven to 375 degrees F, prepare pans. In a large bowl, stir together flour, sugar, cocoa, baking soda and salt. In another bowl, stir together buttermilk, oil, butter, egg and vanilla until blended. Add dry mix to wet mix until just combined. Stir in chips. Spoon into pans. In a medium bowl, stir together cream cheese, sugar, egg and almond extract until well blended; stir in almonds. Spoon mixture over muffins. Bake 20-25 minutes or until cooked. Makes 12. These muffins freeze well.

Honey Lemon Muffins

Today's recipe is...

Honey Lemon Muffins

1 cup instant non-fat milk powder
1 cup flour
4 tsp baking powder
1/2 tsp salt
1/2 cup chopped crystallized lemon peel
1 egg
1/2 cup honey
1/2 cup hot water
3 Tbsp melted butter

Preheat oven to 400 degrees F, prepare pans. Sift dried milk, flour, baking powder and salt. Add lemon peel. Measure honey into small bowl then add hot water, mix to melt the honey (or melt in microwave). Beat egg, add honey and water and melted butter. Stir the dry mix into the wet mix until just combined. Spoon into pans and bake for 10 minutes or until golden.

Amish Muffins

Today's recipe comes from our collection of Amish recipes. We have quite a large variety and would love to hear how they work out for you.

Amish Muffins

5 c. flour
5 tsp. soda
2 tsp. salt
2 tsp. allspice
15 oz. raisin bran
3 c. sugar

Mix above ingredients. Add: 1 c. oil 1 qt. buttermilk 2 tsp. vanilla Mix well. Butter muffin tins well and fill 3/4 full. Bake at 375 degrees for 20 minutes.
